Sweet potato and corn puree

Super delicious and super easy, this puree was a freezer staple when Fletcher was starting solids.

Ingredients

1 sweet potato

1 corn cob


Method

  1. Peel and coarsely chop sweet potato, remove corn from the cob

  2. Place sweet potato and corn in a steamer over boiling water and cook for 15 minutes or until sweet potato has softened

  3. Blitz all cooked ingredients with a stick mixer or blender, adding some of the cooking water to achieve a smoother texture

  4. Freeze in an ice cube tray and simply defrost cubes in the microwave for meal times.
